Gluten Free ChocolateChip Muffins (low fat and great as vegan as well)

Mix...

1Tbsp of Rob's Red Mill Flax Seed Meal
2Tbsps water

...in a large bowl.

Add...

1 egg white (or for vegan half of a very ripe banana mashed),
4 Tbsp applesause (no sugar added),
1 tsp gluten free vanilla,
1/3 cup organic sugar,
1 cup of fat free skim milk (or vanilla rice milk for vegan)

Mix together. Add ...

2 cups Rob's Red Mill Gluten Free Biscuit/Baking Mix (add 1 tbsp of the flax seed meal to the baking mix).

Mix with a spoon.

Add 3/4 cup of gluten free / organic chocolate chips.

Spoon into a muffin tin. Makes six muffins.

Bake at 325oF for approx 15 minutes.

These are flavorful, dense and a perfect start of the day. I make them on Sunday morning and have the rest during the week!

I've just put my mix in the oven. I had to substitute the chocolate for sultanas, and the flax seed for organic seed muesli mix, and i put a mashed banana in anyway for taste but it mixed excelently. I have every hope for a great yummy muffins :)

Almost like the muffin-version of a Starbucks coffee cake!

There is a banana-chocolate chip coffee cake at Starbucks that I love. These are "almost" the muffin version of that treat! I made them vegan with the banana and regular flavor rice milk. Even my hubby liked them! Thank you for sharing a great recipe!
