gluten free diet concerns

I was introduced to the gluten free diet by my son's therapist. She gave us some paperwork talking about the diet and what he can or cannot eat. So my question is how can I start working some of those foods into my sons eating habits. He is very picky for one thing and really only likes to eat the foods that are not the healthiest for his condition with autism. What is the best method to trying to get a picky eater to start eating the foods that are on this diet. I need some ideas please.
