Gluten-Free pie crust?

Hello, I am a baker from the USA and have several friends who are gluten intolerant. I love to make quiches for brunch parites. They can be made without a crust, but so much better with one. Does anyone have a method/recipe for gluten-free crust? What type of flour would you use that won't give off too strong of flavor.

JGF Flour for Pie Crust

I always use Jules Gluten Free flour for my pie crusts and use a traditional pie crust recipe. For 1 pie crust I use:

1 cup Nearly Normal GF Flour
1/2 tsp. salt
1/3 cup shortening
2-3 TBS Cold Water

I've used it for quiche, pumpkin pie, and cherry pie--all turned out great! I purchase the flour online at www.julesglutenfree.com.
