I am looking for information for a paper for school

I am looking for some people with celiac to answer some questions for a paper I am writing. Answers will be anonymous, I am just looking for a variety of responses.

I have a gluten sensitivity, but would like to know more about how someone with celiac handles cooking meals.

Here are the questions:

1) Please describe special precautions you take around your own kitchen to prevent contact with gluten.

2) What are some foods you were surprised to learn contain gluten?

3) How do you handle meals with others that are not concerned about gluten? (entertaining at home) Do you cook all food the same, treating them to some gluten free food? or do you make separate meals?

4) What are some challenges you have found to cooking with other grains? (cooking corn pasta instead of wheat, etc)

5) Have you experienced any issues with the increased glycemic load in eating more potato, rice, and other starches? (weight gain, moods, energy levels)

Thank you for helping me out. I look forward to any answers you have for me. If you can not answer them all, any answers will be helpful.
