I have gained weight and I'm gluten, dairy and soy free.

I have Crohn's Disease and with the diagnosis learned I am gluten, dairy and soy intolerant. That includes millet, amaranth and quinoa because apparently the protein chains of these are too similar to wheat (they have 18 of the 20 same protein chains).

I ate rice/flour, potato flour, etc. breads and corn chips and kept feeling so bloated to the point I couldn't breath well.

I'm slight, 5' tall, weigh about 112, but that's too much for me. I feel best at 100 lbs. So, I cut out all the gf substitutes and feel so much better.

Of course I had to start exercising to get the weight off, but I don't feel bloated and only allow myself pasta once a week. I have bread once a week sometimes, depending on leftovers to make sandwiches, but I normally will use bibb lettuce to wrap meat in (from the South Beach Diet book recipes).

You really don't need the bread laden foods, and in fact, the less you eat of these substitutes the better you will feel. I don't have a big sweet tooth so I'm fortunate, but occasionally I'll indulge in dark chocolate or those yummy gf donuts.
