Substituting GF flour for regular flour

I have a lot of good recipes that call for flour and I want to know how to substitute GF flour. Is there a formula for substituting GF flour or what?

I would appreciate any information.

Patricia, I think the following page will help you with more information regarding gluten free flour.

Some commercial mixes can be used in place of regular flour, but it is always worth reading the packaging, in case they recommend using a slightly different amount. My page on flour substitutes should help you when using specific flours, in place of regular wheat flour.

You may also find that you need to increase or decrease the amount of liquid called for in a normal recipe, when you use gluten free flour.

Most recipes would also benefit from the addition of a little xanthum gum, which acts as a substitute for the missing gluten in the flour.

I hope these quick notes and the pages I referenced above help you. I am sure other people will comment on your question also.

Flour Substitutes

Hi Pam,

I'm always asking myself the same question! This is what my daughter and I have concluded so far.

We have not made bread at home yet, I'll leave that to the experts, however for recipes that require meats dredged in flour we use a flour substitute like Bobs Red Mill or Namaste. The latter is my favorite, but always try to use a mix of flour.

Rice flour alone is grainy and all bean flour (if you use a lot can give you gas!) AND IT WILL TASTE LIKE BEANS. I made some loaded baked potato soup the other day and substituted 1/2 GF flour and instant mashed potatoes to to finish thicken it. My hubby who can eat regular food thought it was great, even asked for a 2nd bowl.

I stick with the mixes for pancakes and things like that. I love the Namaste brand and my friend just told me about a site called 123 gluten free. Best sugar cookie mixes ever, and it's all supposed to be good. It would be nice if we could just share what we like and don't like in brands and the particular food because it is so expensive to try and I have had some pretty bad GF food. I'm sure everyone has had this experience. Best of luck to you.
