what can I substitute for potato flour?

I can not have potatoes as well as gluten. I am trying to make a flour mix that I can have on hand. The recipe reads as this....

5 1/4 fine white rice flour
1 cup Potato flour
1 cup tapioca flour

and the other one reads

4 1/2 cups soy flour
2 cups Tapioca flour
2 cups potato flour
2 1/4 cups cornstarch

Is their anything a can use in these basic flour mixes BESIDES the POTATO flour?

Potato flour provides smoothness to a gluten free flour mix. As do cornflour (cornstarch) and tapioca flour. As these are already in the recipes you give, I would suggest trying arrowroot as a replacement for the potato flour.

Another option would be to use one of Bette Hagmans flour mixes. Bette was a pioneer in the field of gluten free cooking, experimenting with different flours before many of today's options were available. Her mix is as follows...

2 cups garfava flour
1 cup sorghum flour
3 cups cornstarch
3 cups tapioca flour

You can try Buckwheat flour, it's not wheat but a part of the rhubarb family and has no gluten or wheat in it.

Do have a look at our website as there will be a Newsletter on which has an artice about flours.
