Gluten free chicken nuggets recipe

Gluten free chicken nuggets are not usually served in fast food restaurants, but there is nothing to stop you preparing and cooking them at home.

If your child is the one on the gluten free diet, serving these nuggets can help to make them feel they are not missing out on “normal” food. They are also a great treat if your child has friends round after school.

They take a little while to prepare, but are really easy.  You can serve these to the whole family, which also has the benefit of reducing any risk of cross contamination AND you will know exactly what is in them - rather than loads of ingredients that you cannot even pronounce!

Serves 3-4 children or 2 adults

  • 2 boned, chicken breasts
  • 1 large egg
  • Gluten free breadcrumbs (I used Mrs Crimbles - a brand easily available in the UK)
  • Salt and freshly ground black pepper
  • Rapeseed oil

Start by cutting the chicken breasts into small, nugget-sized pieces with a sharp knife.

Break the egg into a bowl and whisk it gently with a fork to break up the yolk.

Tip your breadcrumbs (or any of the variations listed below the gluten free chicken nuggets recipe) into a bowl, add seasoning and stir to incorporate.

Drizzle oil onto your baking pan, ready to receive the nuggets.

Take each piece of chicken and dip it into the beaten egg and then the coating. Press the breadcrumbs into the egg to ensure a good covering.

Place onto your baking pan. Do this until all your pieces of chicken are coated.

You may like to drizzle a little extra oil over the nuggets once they are all in the pan. Don’t be heavy handed though, as they will soak up the extra fat which adds extra calories!

Place the pan in the pre-heated oven and bake for 20 minutes.

Serve with homemade sweet potato wedges (see below), or gluten free french fries along with peas or gluten free baked beans.

You may like to prepare these ahead of time, ready to pop in the oven at meal time. The wedges can be cooked at the same time.

Variations instead of breadcrumbs

  • Commercial gluten free stuffing mix
  • Crushed gluten free cornflakes
  • Add paprika or herbs to your coating of choice

Sweet Potato Wedges

I like to serve my gluten free chicken nuggets with these wedges rather than commercial fries which can often have flour as one of the ingredients.

  • 1 small sweet potato per person
  • Rapeseed oil
  • Seasoning

Cut the sweet potatoes into wedge shapes and arranged on an oiled baking sheet or tray. Drizzle a little more oil over the wedges, along with seasoning of your choice. I like to use dried Hungarian paprika on mine.

Place in the oven with the gluten free chicken nuggets and bake for 20 minutes.
