wheat and potato flours mixed together

Depending on what I've eaten or how much, I end up running to the bathroom. How safe is bread made with wheat and potato flours mixed together? Has anyone tried it? I've tried the "true" gluten-free bread and it is awful! Can someone please tell me where I can look to find out more information? - Thank you for your assistance, Susan Allison Abilene, TX

Susan have you been tested for celiac disease or gluten intolerance? If so, and you proved positive then I am afraid wheat flour is out! You just cannot have it.

Potato flour is fine, as it is gluten free. It can be mixed with other types of gluten free flour for baked goods.

I have included a gluten free potato bread recipe on the site, which is safe to eat.

Gluten free bread will taste different to the bread you have eaten in the past. It is missing the very ingredient that makes bread chewy. Instead the results are more like a savory "cake", which may take some getting used to.

However, if you have been diagnosed with celiac disease I am afraid it is a taste you will have to get used to.

If you have not been diagnosed, or tests have proved negative, then there is no reason to avoid gluten.

Don't do it!

Before I left for a short vacation to New Orleans, I had asked my local grocery to order Potato Starch Flour for me since I make my own bread.

When I returned home, I ran to the store and grabbed a box that said Potato Bread Mix, thinking it was gluten-free, even though not what I had previously ordered.

On Feb. 28th I made bread. For the next few days, I continued to eat the bread, but noticed I was feeling worse and worse. Actually, I thought I was getting a stomach virus because I had been around a sick friend. However, as symptoms worsened, I took into account everything I was eating.

To make a long story short, I had made bread from a potato flour/wheat flour mix and my negilence over not checking the ingredients has made me miserable.

For a solid week, I felt like I had the flu, sore and achy all over. The fatigue was unbelievable, and I felt 'spaced-out'-like you feel when you have a fever-the whole time. It is now March 10th, and I'm still suffering from wheat residue in my system. My stomach is still hurting, but the other symptoms have subsided.

I worry about the damage I've done to my stomach and intestines. I look back and think how could I have been so stupid!? I do try to be careful, but it is so hard to navigate in a world of wheat-added food.
