Gluten Free Chocolate Chip Cookies

I don't know about you, but I find that I cannot resist gluten free chocolate chip cookies, warm from the oven. Gluten free cookies are not difficult to make, and I always try to have some in the cupboard.

I thought I'd start this page by sharing one of my favourite gluten free cookie recipes, but be warned! They are very moorish so don't blame me if you eat them all. You get a double dose of chocolate in these cookies as there is cocoa in the mixture as well as the chocolate chips. Yummy.


Indulgent Gluten free chocolate chip cookies

Gluten Free Chocolate Chip Cookies

Ingredients

  • 1/4 cup cocoa powder
  • 1/2 cup potato flour
  • 1/2 cup brown rice flour
  • 1/2 cup gram flour or amaranth flour
  • 1/4 cup ground almonds
  • 1/2 cup granulated sugar
  • 1/3 cup canola oil
  • 2 eggs
  • white chocolate chips


Method

Pre-heat the oven to 180oC or 350oF.

Place all the dry ingredients into a bowl or your food processor. Mix them up thoroughly with a spoon, or give them a whizz with the metal blade in the processor, so that they are combined well.

Break the eggs into a cup and mix with a fork. Pour the eggs and the oil into the dry ingredients and mix together. The dough will be sticky and crumbly. When it starts to hold together, knead gently into a ball.

Prepare your cookie tray, by either greasing it well, or preferably lining it with baking parchment to prevent sticking.

Pull off small pieces of mixture and flatten them into rough circles on the tray. Press chocolate chips into the surface of the cookies.

Bake for 10-12 minutes. Remove from tray and store in a tin or plastic box (if they don't all get eaten first!)
